coffee pancake recipe

Coffee pancakes make breakfast feel like a café treat without requiring me to leave pajamas behind. I mix bold coffee into fluffy batter, then watch my husband demolish a stack. My picky kid suddenly approves, which feels suspiciously miraculous. Add syrup, grab your mug, and call this mom-approved productivity before noon.

Ingredients

Coffee Pancake Batter

  • All-purpose flour — 2 cups (240 g)
  • Granulated sugar — 2 tablespoons (25 g)
  • Baking powder — 2 teaspoons (8 g)
  • Baking soda — 1/2 teaspoon (2 g)
  • Salt — 1/2 teaspoon (3 g)
  • Ground cinnamon — 1 teaspoon (3 g)
  • Instant espresso powder — 1 tablespoon (5 g)
  • Brewed coffee, cooled — 1/2 cup (120 ml)
  • Buttermilk — 1 cup (240 ml)
  • Egg — 1 large (50 g)
  • Melted unsalted butter — 3 tablespoons (42 g)
  • Vanilla extract — 1 teaspoon (5 ml)

Serving Toppings

  • Maple syrup — 1/3 cup (105 g), for serving
  • Whipped cream — 1/2 cup (60 g), optional
  • Mini chocolate chips — 1/4 cup (45 g), optional

Instructions

  • Whisk flour, sugar, baking powder, baking soda, salt, cinnamon, and espresso powder in a large mixing bowl.
  • In a separate bowl, whisk cooled coffee, buttermilk, egg, melted butter, and vanilla until smooth.
  • Pour the wet mixture into the dry ingredients. Stir gently until just combined. Leave a few small lumps for fluffy pancakes.
  • Let the batter rest for 5 minutes. It should look thick and pourable, not watery.
  • Heat a nonstick skillet over medium-low heat and lightly grease it with butter.
  • Pour about 1/4 cup batter for each pancake. Cook until bubbles appear across the surface and the edges look set.
  • Flip each pancake gently and cook for another 1 to 2 minutes until golden and cooked through.
  • Transfer cooked pancakes to a plate or cooling rack. Avoid stacking immediately if you want the edges to stay slightly crisp.
  • Serve warm with maple syrup, whipped cream, or chocolate chips. Add a small dusting of cinnamon for extra coffeehouse flavor.
  • Freeze completely cooled pancakes in a single layer before transferring them to an airtight freezer bag. Reheat frozen pancakes in a toaster or skillet.

Notes

Keep the batter thick for fluffy pancakes and avoid overmixing, which can create a dense texture. Cook over medium-low heat so the centers cook before the outside becomes too dark. For softer pancakes, cover the skillet briefly after flipping. For slightly crisp edges, leave the skillet uncovered and use a light coating of butter. Freeze cooled pancakes in layers separated by parchment for up to 2 months. Reheat directly from frozen in a toaster, oven, or skillet. Store refrigerated pancakes in an airtight container for up to 3 days. Customize the flavor with pumpkin spice, cardamom, chocolate chips, caramel, chopped pecans, or extra espresso powder.
