Ingredients
  

Banana Bread:

  • 3 overripe bananas mashed
  • ½ cup brown sugar
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 tbsp strong brewed espresso
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ¼ cup unsweetened plant milk
  • ½ cup chopped walnuts optional but bougie

Espresso-Chocolate Glaze:

  • ½ cup vegan dark chocolate chips
  • 2 tbsp brewed espresso
  • 1 tsp coconut oil

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  • Mash bananas in a bowl until creamy and emotionally comforting.
  • Stir in sugar, oil, espresso, vanilla, and plant milk.
  • In another bowl, whisk flour, baking soda, cinnamon, and salt.
  • Combine wet and dry ingredients—do not overmix or overthink.
  • Fold in walnuts if using. Pour batter into prepared pan.
  • Bake for 50 minutes or until toothpick comes out mostly clean.
  • Let loaf cool in the pan for 10 minutes.
  • For glaze, melt chocolate chips, espresso, and coconut oil together until smooth.
  • Pour glaze over cooled bread like you’re icing your life.
