Preheat oven to 350°F (175°C). Grease or line a loaf pan.
Mash bananas in a bowl until creamy and emotionally comforting.
Stir in sugar, oil, espresso, vanilla, and plant milk.
In another bowl, whisk flour, baking soda, cinnamon, and salt.
Combine wet and dry ingredients—do not overmix or overthink.
Fold in walnuts if using. Pour batter into prepared pan.
Bake for 50 minutes or until toothpick comes out mostly clean.
Let loaf cool in the pan for 10 minutes.
For glaze, melt chocolate chips, espresso, and coconut oil together until smooth.
Pour glaze over cooled bread like you’re icing your life.
