Ingredients
  

  • Vegan Beef Tacos:
  • 1 tbsp olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 cup vegan ground beef soy, lentil, or walnut-based
  • 1 tbsp taco seasoning
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Salt to taste
  • 4 taco shells
  • ½ avocado sliced
  • ¼ cup vegan cheese
  • 2 tbsp salsa
  • Coffee Caramel Truffles:
  • ½ cup coconut cream
  • cup coconut sugar
  • 1 tbsp instant coffee
  • 1 tsp vanilla extract
  • Pinch sea salt
  • ¾ cup dark chocolate vegan, melted
  • 1 tsp coconut oil

Instructions
 

Tacos:

  • Heat olive oil in skillet. Sauté onion and garlic until fragrant—like that candle you overpaid for.
  • Add bell pepper and vegan beef. Stir for 5 minutes.
  • Mix in taco seasoning, paprika, cumin, and salt. Cook for another 5 minutes until caramelized.
  • Warm taco shells. Stuff with filling, avocado, cheese, and salsa. Devour like a lady—with extra napkins.

Coffee Caramel Truffles:

  • In saucepan, simmer coconut cream and sugar for 5–7 minutes until thickened.
  • Stir in coffee, vanilla, and salt. Let it cool.
  • Form small balls, chill for 15 minutes.
  • Dip in melted chocolate mixed with coconut oil.
  • Chill on parchment for 20 minutes. Do not eat them all while “checking if they’re ready.”
