Ingredients
  

For the Beef Tacos:

  • Ground beef – 1 lb
  • Taco seasoning – 2 tbsp
  • Olive oil – 1 tbsp
  • Onion – 1 medium diced
  • Garlic – 2 cloves minced
  • Taco shells – 8
  • Shredded lettuce – 1 cup
  • Tomato – 1 diced
  • Shredded cheddar cheese – 1 cup
  • Sour cream – ½ cup
  • Lime wedges – for garnish

For the Mocha Pudding:

  • Heavy cream – 1 cup
  • Whole milk – 1 cup
  • Espresso powder – 2 tbsp
  • Sugar – ½ cup
  • Cornstarch – 2 tbsp
  • Dark chocolate – 4 oz chopped
  • Vanilla extract – 1 tsp

Instructions
 

For the Beef Tacos:

  • Heat oil in a skillet over medium-high heat. Add the onion and garlic, sauté until soft.
  • Add ground beef to the skillet, cook until browned. Stir in taco seasoning and cook for 2 minutes.
  • Assemble tacos by spooning beef into taco shells. Top with lettuce, tomatoes, cheese, and sour cream.
  • Serve with lime wedges for an extra zing.

For the Mocha Pudding:

  • In a saucepan, combine milk, cream, espresso powder, and sugar. Heat over medium heat, stirring.
  • In a separate bowl, mix cornstarch with a little milk, then whisk into the saucepan.
  • Cook until the pudding thickens (about 5-7 minutes). Remove from heat and stir in chocolate and vanilla.
  • Pour into serving dishes and refrigerate for 2 hours. Serve chilled.
