For the Beef Tacos:
- Ground beef – 1 lb
- Taco seasoning – 2 tbsp
- Olive oil – 1 tbsp
- Onion – 1 medium diced
- Garlic – 2 cloves minced
- Taco shells – 8
- Shredded lettuce – 1 cup
- Tomato – 1 diced
- Shredded cheddar cheese – 1 cup
- Sour cream – ½ cup
- Lime wedges – for garnish
For the Mocha Pudding:
- Heavy cream – 1 cup
- Whole milk – 1 cup
- Espresso powder – 2 tbsp
- Sugar – ½ cup
- Cornstarch – 2 tbsp
- Dark chocolate – 4 oz chopped
- Vanilla extract – 1 tsp
For the Beef Tacos:
Heat oil in a skillet over medium-high heat. Add the onion and garlic, sauté until soft.
Add ground beef to the skillet, cook until browned. Stir in taco seasoning and cook for 2 minutes.
Assemble tacos by spooning beef into taco shells. Top with lettuce, tomatoes, cheese, and sour cream.

For the Mocha Pudding:
In a saucepan, combine milk, cream, espresso powder, and sugar. Heat over medium heat, stirring.
In a separate bowl, mix cornstarch with a little milk, then whisk into the saucepan.
Cook until the pudding thickens (about 5-7 minutes). Remove from heat and stir in chocolate and vanilla.
Pour into serving dishes and refrigerate for 2 hours. Serve chilled.
