Ingredients
Unsalted butter
softened: 1 cup
Brown sugar: 1 cup
Granulated sugar: 1/2 cup
Eggs: 2 large
Vanilla extract: 1 tablespoon
Espresso powder: 2 tablespoons
All-purpose flour: 2 1/4 cups
Baking soda: 1 teaspoon
Salt: 1/2 teaspoon
White chocolate chips: 1 cup
Instructions
Preheat your oven to 350°F. Line a baking sheet with parchment paper.
Cream butter and both sugars together using an electric mixer until light and fluffy.
Add eggs, vanilla extract, and espresso powder. Mix until smooth and combined.
In another bowl, whisk flour, baking soda, and salt. Slowly mix into the wet ingredients.
Stir in white chocolate chips.
Scoop dough onto the baking sheet.
Bake for 10-12 minutes until edges are golden brown.
Allow the cookies to cool before serving.
