  • Unsalted butter softened: 1 cup
  • Brown sugar: 1 cup
  • Granulated sugar: 1/2 cup
  • Eggs: 2 large
  • Vanilla extract: 1 tablespoon
  • Espresso powder: 2 tablespoons
  • All-purpose flour: 2 1/4 cups
  • Baking soda: 1 teaspoon
  • Salt: 1/2 teaspoon
  • White chocolate chips: 1 cup

Instructions
 

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  • Cream butter and both sugars together using an electric mixer until light and fluffy.
  • Add eggs, vanilla extract, and espresso powder. Mix until smooth and combined.
  • In another bowl, whisk flour, baking soda, and salt. Slowly mix into the wet ingredients.
  • Stir in white chocolate chips.
  • Scoop dough onto the baking sheet.
  • Bake for 10-12 minutes until edges are golden brown.
  • Allow the cookies to cool before serving.
