For the Coffee Cake Layers
- 2 cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ cup unsalted butter softened
- 1 cup granulated sugar
- 3 eggs
- 1 tsp vanilla extract
- ½ cup brewed coffee cooled
- ½ cup whole milk
For the Caramel Coffee Mousse
- 1 cup heavy cream
- ½ cup caramel sauce
- 1 tbsp instant coffee powder
- ½ tsp vanilla extract
- 1 tsp gelatin bloomed in 1 tbsp cold water
For the Caramel Drizzle
- ½ cup sugar
- 2 tbsp butter
- ¼ cup heavy cream
- Pinch of sea salt
Bake the Coffee Cake Layers
Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
Whisk flour, baking powder, and baking soda in a bowl.
Cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
Alternate adding dry ingredients and coffee-milk mixture. Mix until smooth.
Divide batter between pans. Bake for 25-30 minutes.
Cool completely before assembling.
Prepare the Caramel Coffee Mousse
Whip heavy cream until soft peaks form.
Mix caramel sauce, coffee powder, and vanilla extract.
Warm gelatin until dissolved, then fold into caramel mixture.
Gently fold in whipped cream. Chill for 30 minutes.
Make the Caramel Drizzle
Melt sugar in a saucepan over medium heat until golden.
Stir in butter, then slowly pour in heavy cream while stirring.
Add sea salt and let cool.
Assemble the Cake
Spread caramel mousse over one cake layer.
Place second layer on top and coat with more mousse.
Drizzle with caramel sauce. Chill for at least 1 hour before slicing.
