These cookies are a sweet and caffeinated dream—perfectly crispy on the outside and chewy on the inside. Vegan-friendly, of course.

- 1 tbsp instant coffee granules
- 2 tbsp hot water
- 1 cup flour whole wheat or all-purpose
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup coconut sugar
- 1/4 cup coconut oil melted
- 1/4 cup almond milk or any plant milk
- 1 tsp vanilla extract
- 1/2 cup vegan chocolate chips
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Dissolve coffee granules in hot water and set aside.
In a mixing bowl, combine flour, baking soda, and salt.
In a separate bowl, whisk coconut sugar, coconut oil, almond milk, vanilla, and coffee mixture.
Stir the wet ingredients into the dry ingredients until well combined.
Fold in chocolate chips.
Scoop dough into tablespoon-sized balls and place them on the baking sheet.
Bake for 12-15 minutes, or until edges are golden brown.
Let cookies cool on a wire rack.
