These cookies are a sweet and caffeinated dream—perfectly crispy on the outside and chewy on the inside. Vegan-friendly, of course.

Ingredients
  

  • 1 tbsp instant coffee granules
  • 2 tbsp hot water
  • 1 cup flour whole wheat or all-purpose
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil melted
  • 1/4 cup almond milk or any plant milk
  • 1 tsp vanilla extract
  • 1/2 cup vegan chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Dissolve coffee granules in hot water and set aside.
  • In a mixing bowl, combine flour, baking soda, and salt.
  • In a separate bowl, whisk coconut sugar, coconut oil, almond milk, vanilla, and coffee mixture.
  • Stir the wet ingredients into the dry ingredients until well combined.
  • Fold in chocolate chips.
  • Scoop dough into tablespoon-sized balls and place them on the baking sheet.
  • Bake for 12-15 minutes, or until edges are golden brown.
  • Let cookies cool on a wire rack.
