  • Chocolate sandwich cookies — 24 cookies (270 g), finely crushed
  • Unsalted butter — 5 tablespoons (70 g), melted
  • Granulated sugar — 1 tablespoon (12 g)

Chocolate Coffee Cheesecake Filling

  • Cream cheese — 24 oz (680 g), softened
  • Granulated sugar — 1 cup (200 g)
  • Unsweetened cocoa powder — 1/3 cup (30 g)
  • Fresh espresso — 1/4 cup (60 ml), cooled
  • Heavy cream — 1/2 cup (120 ml), room temperature
  • Large eggs — 3 (150 g), room temperature
  • Vanilla extract — 2 teaspoons (10 ml)
  • Semisweet chocolate — 6 oz (170 g), melted and slightly cooled
  • Cornstarch — 1 tablespoon (8 g)

  • Whipped cream — 1 cup (120 g), optional
  • Dark chocolate shavings — 2 tablespoons (10 g), optional
  • Espresso powder — 1 teaspoon (2 g), optional

Instructions
 

  • Preheat the oven to 325°F (165°C). Lightly grease a 9-inch springform pan and wrap the outside tightly with two layers of foil to prevent water from entering.
  • Combine finely crushed chocolate cookies, melted butter, and sugar in a mixing bowl. Stir until the crumbs resemble damp sand and hold together when pressed.
  • Press the crust firmly across the bottom of the springform pan. Bake for 10 minutes, then let it cool while preparing the filling.
  • Beat softened cream cheese and sugar on medium-low speed until smooth. Avoid overmixing because excess air can cause the cheesecake to puff and crack.
  • Add cocoa powder, cooled espresso, heavy cream, vanilla, and cornstarch. Mix gently until the filling looks completely smooth.
  • Pour in the melted, slightly cooled chocolate. Mix slowly until the chocolate disappears into the filling without creating streaks.
  • Add eggs one at a time and mix on low speed only until each egg disappears. The finished batter should look thick, glossy, and silky.
  • Pour the filling over the cooled crust and smooth the surface with a spatula. Tap the pan gently to release large air bubbles.
  • Place the springform pan inside a roasting pan. Carefully pour hot water into the roasting pan until it reaches halfway up the springform pan.
  • Bake for 55 to 65 minutes, until the edges look set but the center still has a gentle wobble. Do not wait for the center to become completely firm.
  • Turn off the oven and leave the cheesecake inside with the door slightly open for 30 minutes. This gradual cooling helps prevent cracks.
  • Remove the cheesecake from the water bath and cool completely on a wire rack. Refrigerate for at least 4 hours, preferably overnight, before slicing.
  • Run a thin warm knife around the edge before releasing the springform ring. Slice with a clean, warm knife for neat pieces.
  • Top each slice with whipped cream, chocolate shavings, or a light dusting of espresso powder. Serve chilled for the firmest texture or let slices sit briefly for a softer finish.
  • Store covered in the refrigerator for up to 5 days. Freeze individual slices for up to 1 month, then thaw them overnight in the refrigerator.

For a smooth, dense cheesecake, keep ingredients at room temperature and avoid excessive mixing after adding the eggs. A water bath provides gentle, even heat and helps maintain a creamy center. For a softer texture, serve chilled but allow each slice to stand for 10 minutes. For firmer slices, refrigerate overnight. Customize with dark chocolate, white chocolate, caramel, hazelnuts, orange zest, cinnamon, or extra espresso powder. Keep the cookie crust firmly packed for a crisp base.
