Ingredients
  

  • 1 cup walnuts
  • ½ cup rolled oats
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp brewed espresso strong
  • 8 Medjool dates pitted
  • ¼ cup dark chocolate chips
  • ½ tsp vanilla extract
  • ¼ tsp sea salt

Instructions
 

  • Toss walnuts and oats into a food processor. Pulse until finely ground.
  • Add cocoa, espresso, dates, chocolate chips, vanilla, and salt. Blend until the mixture holds together.
  • Scoop small portions and roll into bite-sized balls.
  • Place on a baking sheet and chill for 20 minutes.
  • Enjoy immediately or store in the fridge for up to a week.
