- 1 cup walnuts
- ½ cup rolled oats
- 2 tbsp unsweetened cocoa powder
- 2 tbsp brewed espresso strong
- 8 Medjool dates pitted
- ¼ cup dark chocolate chips
- ½ tsp vanilla extract
- ¼ tsp sea salt
Toss walnuts and oats into a food processor. Pulse until finely ground.
Add cocoa, espresso, dates, chocolate chips, vanilla, and salt. Blend until the mixture holds together.
Scoop small portions and roll into bite-sized balls.
Place on a baking sheet and chill for 20 minutes.
Enjoy immediately or store in the fridge for up to a week.
