Ingredients
  

  • 2 cups strong brewed espresso cooled
  • ½ tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 12 oz vegan cream cheese
  • 1 cup canned coconut cream just the thick part
  • ½ cup powdered sugar
  • 1 package vegan ladyfingers or sponge cake
  • Extra cinnamon for dusting like edible glitter

Instructions
 

  • Brew espresso and stir in cinnamon, vanilla, and maple syrup. Let cool.
  • In a bowl, beat vegan cream cheese, coconut cream, and powdered sugar until fluffy. Channel your inner bakery witch.
  • Quickly dip each ladyfinger into the espresso mixture—don’t soak it like your last relationship.
  • Line dipped ladyfingers at the bottom of your serving dish like a caffeinated puzzle.
  • Spread half the cream mixture over them, smoothing it like concealer on a Monday morning.
  • Repeat layers: dip, place, spread, pray you don’t eat it now.
  • Dust the top generously with cinnamon. Cover and chill for at least 4 hours.
  • Slice, serve, and accept compliments gracefully.
