- 2 cups strong brewed espresso cooled
- ½ tsp ground cinnamon
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 12 oz vegan cream cheese
- 1 cup canned coconut cream just the thick part
- ½ cup powdered sugar
- 1 package vegan ladyfingers or sponge cake
- Extra cinnamon for dusting like edible glitter
Brew espresso and stir in cinnamon, vanilla, and maple syrup. Let cool.
In a bowl, beat vegan cream cheese, coconut cream, and powdered sugar until fluffy. Channel your inner bakery witch.
Quickly dip each ladyfinger into the espresso mixture—don’t soak it like your last relationship.
Line dipped ladyfingers at the bottom of your serving dish like a caffeinated puzzle.
Spread half the cream mixture over them, smoothing it like concealer on a Monday morning.
Repeat layers: dip, place, spread, pray you don’t eat it now.
Dust the top generously with cinnamon. Cover and chill for at least 4 hours.
Slice, serve, and accept compliments gracefully.
