Ingredients
  

  • 1 cup rolled oats
  • ½ cup vanilla protein powder
  • ½ cup almond flour
  • ¼ cup maple syrup
  • ¼ cup brewed coffee cooled
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup chopped walnuts optional
  • 1 tablespoon coconut oil for greasing

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and grease your baking dish with coconut oil.
  • Mix Dry Ingredients: In a mixing bowl, whisk together rolled oats, protein powder, almond flour, baking powder, cinnamon, and salt.
  • Combine Wet Ingredients: In a separate bowl, mix maple syrup and brewed coffee until combined.
  • Combine Mixtures: Add wet ingredients to the dry mix, stirring until a thick batter forms. Fold in chopped walnuts if desired.
  • Bake: Pour the mixture into the greased baking dish and spread evenly. Bake for 25 minutes until golden brown.
  • Cool and Slice: Allow the bars to cool before slicing them into pieces.
