- 3 overripe bananas brown and sad
- 1/2 cup melted butter salted, because life’s too short

- 1 egg large, not extra-large drama
- 1 tsp vanilla extract the good stuff
- 1 1/2 cups flour all-purpose, not fancy
- 1 tsp baking soda for fluff, not cleaning
- 1/2 tsp salt to balance the chaos
- 1/4 cup strong brewed coffee for the glaze
- 1 cup powdered sugar for the glaze, obviously
Preheat the oven to 350°F (175°C). Grease a loaf pan.
Mash bananas in a bowl until gooey.
Mix in melted butter, sugar, egg, and vanilla.
Add flour, baking soda, and salt. Stir until just combined.
Pour batter into the pan. Bake for 50 minutes.
For the glaze, whisk coffee and powdered sugar until smooth.
