Ingredients

  • For the Cookies:
  • 1 ¼ cups all-purpose flour
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ cup vegan butter room temp
  • ½ cup brown sugar
  • 1 tbsp instant coffee or strong espresso
  • 1 tsp vanilla extract
  • 2 tbsp almond milk

  • 3 tbsp vegan butter
  • ¾ cup powdered sugar
  • 2 tbsp almond butter
  • ½ tsp almond extract
  • 1 tbsp plant milk adjust as needed

Instructions

  • Preheat oven to 350°F (175°C). Line a tray with parchment so your cookies don’t pull a disappearing act.
  • Mix flour, baking powder, and salt in one bowl. Easy and drama-free.
  • In another bowl, beat vegan butter and sugar until fluffy—like your favorite throw pillow.
  • Stir in coffee, vanilla, and almond milk. The smell alone might make you weep.
  • Combine dry ingredients with wet and stir until you get a soft, slightly sticky dough.
  • Roll dough into small balls, flatten gently, and space them like your boundaries—with purpose.
  • Bake for 10 minutes. Let them cool unless you enjoy molten cookie burns.
  • For the filling, mix butter, almond butter, sugar, extract, and milk until silky and smug.
  • Pipe or spoon onto one cookie, sandwich with another, and press gently.
  • Chill slightly or eat immediately with zero shame.
