Ingredients

For the Cake:

  • cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter soft
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 3 large eggs
  • 1 tablespoon instant coffee dissolved in ¼ cup hot water
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • ¾ cup mini chocolate chips coated in 1 tsp flour to prevent sinking

For the Frosting:

  • 1 cup unsalted butter
  • cups powdered sugar
  • 2 tablespoons cocoa powder
  • teaspoons espresso powder
  • 2 tablespoons milk or cream
  • Pinch of salt
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350°F. Line pans like you’re prepping for cake greatness.
  • Sift flour, powder, soda, and salt. Set aside and admire your neat pile.
  • Cream butter and sugars until fluffy enough to pillow your regrets.
  • Add eggs one by one, mixing like your love life depends on it.
  • Stir in dissolved coffee, sour cream, and vanilla. Smells? Divine.
  • Fold in dry mix gently—overmixing is a known cake crime.
  • Toss chips in flour and fold them in like a secret.
  • Divide batter evenly. Bake 28–30 minutes or until golden and proud.
  • Cool completely. Frosting and warm cake? A sad, sliding mess.
  • Beat frosting ingredients together. Smear between layers and on top. Add drama with extra chips.

Additional Notes/Tips to Enhance Flavor

  • Chill cake before slicing for Instagram-worthy cuts.
  • Use dark chocolate chips for depth. Milk chocolate if you like sweet sweet chaos.
  • Add a pinch of cinnamon to the frosting for warmth.
  • A coffee glaze drizzle on top = chef’s kiss.
  • Don’t skip sour cream—it makes the crumb unreasonably good.
