For the Banana Bread:
- 3 ripe bananas mashed
- 1/2 cup unsalted butter melted
- 3/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
For the Coffee Mix:
- 2 tbsp instant coffee or espresso powder
- 2 tbsp hot water
Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
Mash bananas in a large bowl until smooth.
Stir in melted butter, brown sugar, eggs, and vanilla extract.
In a small bowl, dissolve coffee powder in hot water.
Add coffee mixture and cinnamon to the banana mixture and stir well.
In another bowl, whisk together flour, baking soda, and salt.
Gradually combine dry ingredients with the wet mixture.
Pour batter into the prepared loaf pan.
