For the churros:

- 2 tbsp instant espresso powder
- 2 tbsp coconut oil
- 1 tbsp maple syrup
- 1 cup all-purpose flour
- Pinch of salt
For the cinnamon sugar coating:
- ½ cup granulated sugar
- 1 tsp ground cinnamon
For the dark chocolate dip:
- ¾ cup chopped vegan dark chocolate
- ¼ cup full-fat coconut milk
- 1 tsp espresso powder
- 1 tsp vanilla extract
- For frying:
- 2 –3 cups vegetable oil
Prepare churro dough: In a saucepan, boil water, espresso powder, coconut oil, and maple syrup. Stir in flour and salt until a dough forms.
