Ingredients
  

For the churros:

  • 1 cup water
  • 2 tbsp instant espresso powder
  • 2 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1 cup all-purpose flour
  • Pinch of salt

For the cinnamon sugar coating:

  • ½ cup granulated sugar
  • 1 tsp ground cinnamon

For the dark chocolate dip:

  • ¾ cup chopped vegan dark chocolate
  • ¼ cup full-fat coconut milk
  • 1 tsp espresso powder
  • 1 tsp vanilla extract
  • For frying:
  • 2 –3 cups vegetable oil

Instructions
 

  • Prepare churro dough: In a saucepan, boil water, espresso powder, coconut oil, and maple syrup. Stir in flour and salt until a dough forms.
  • Cool slightly: Let the dough rest for 10 minutes. Not everything has to be high-speed.
  • Heat oil: Pour oil into a deep pan and heat to 350°F. Don’t guess—this is science and sass.
  • Pipe churros: Fill a piping bag with dough. Pipe 4-inch strips directly into hot oil using a star tip.
  • Fry golden: Fry for 2–3 minutes per side or until golden brown. Flip with tongs like a boss.
  • Drain excess oil: Place fried churros on paper towels. Dab gently—nobody likes soggy confidence.
  • Toss in cinnamon sugar: While warm, coat churros evenly in cinnamon sugar mix.
  • Make chocolate dip: Heat coconut milk, espresso powder, and vanilla. Add chocolate and stir until smooth and sinful.
  • Serve: Plate churros with a ramekin of warm chocolate sauce. Take a photo before inhaling.
