  • 1 cup unsalted butter softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 tbsp instant espresso powder
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 cups old-fashioned oats
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream butter, brown sugar, and granulated sugar until fluffy.
  • Mix in espresso powder, eggs, and vanilla until smooth.
  • In a separate bowl, whisk flour, baking soda, and salt.
  • Gradually add dry ingredients to the wet mixture, stirring well.
  • Fold in oats and chocolate chips.
  • Scoop dough into 1-inch balls and place 2 inches apart on the baking sheet.
  • Bake for 10-12 minutes, until edges turn golden.
  • Cool on the sheet for 5 minutes, then transfer to a wire rack.
  • Eat immediately or pretend you’ll share later.
