These vegan energy bites are made with dates, oats, nut butter, and espresso—perfect for busy mornings or "don’t talk to me" afternoons.

- 1 cup Medjool dates pitted and soft
- ½ cup rolled oats
- 2 tbsp almond butter
- 1 tbsp instant coffee or espresso powder
- 1 tsp vanilla extract
- Pinch of salt
- 1 tbsp chia seeds optional
- 2 tbsp mini vegan chocolate chips optional but recommended if you're extra
Blend dates in a food processor until a sticky ball forms.
Add oats, espresso powder, almond butter, vanilla, and salt.
Pulse until the mixture looks like you tried but not too hard.
Fold in chia seeds and chocolate chips with a spatula.
Scoop into 1-inch bites and roll into snack-sized balls.
Chill in fridge for 10 minutes (or eat immediately, we won’t tell).
Store in an airtight container for up to a week.
