  • 1 cup rolled oats
  • 1 cup dates pitted and chopped
  • 1/4 cup brewed coffee cooled
  • 1/2 cup protein powder vanilla or unflavored
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon cinnamon
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line or grease an 8x8-inch baking pan.
  • Blend oats and dates in a food processor until finely chopped and combined.
  • Add the wet ingredients: Pour in the coffee, almond butter, maple syrup, and vanilla extract. Blend until a sticky dough forms.
  • Add protein powder and cinnamon. Pulse a few times to mix everything.
  • Press mixture into the baking pan evenly using a spatula.
