Ingredients
  

For the cream layer:

  • 1 ½ cups raw cashews soaked overnight
  • ½ cup coconut cream
  • ¼ cup maple syrup
  • 2 tbsp lemon juice
  • 2 tsp vanilla extract
  • ¼ tsp salt

For the espresso soak:

  • ¾ cup strong brewed espresso cooled and bold
  • 2 tbsp maple syrup
  • 1 tsp coffee liqueur optional but encouraged

For the cake base (ladyfinger alternative):

  • 1 package vegan sponge cake or cookies roughly 8–10 pieces
  • Topping:
  • 2 tbsp unsweetened cocoa powder
  • Shaved dark chocolate optional but makes you look fancy

Instructions
 

  • Soak cashews overnight or for 4 hours in hot water if you forgot (we all do).
  • Blend cashews, coconut cream, maple syrup, lemon juice, vanilla, and salt until smooth and creamy. Zero lumps allowed.
  • Brew strong espresso, stir in maple syrup and liqueur (if using), and let cool completely.
  • Dip vegan cake pieces quickly into the espresso mixture—no soggy drama.
  • Layer soaked cake on the bottom of your dish like you're building emotional stability.
  • Spread half the cashew cream mixture on top. Smooth it like you're icing your ex out.
  • Repeat with another espresso-dipped cake layer and finish with the remaining cream.
  • Sift cocoa powder over the top with flair. Add chocolate shavings if you're feeling yourself.
  • Cover and chill for at least 3 hours. Overnight if you’re a planner (or asleep).
