Crunchy roasted cashews coated in a rich coffee-cinnamon glaze.

Ingredients
  

  • 2 cups cashews raw
  • ¼ cup maple syrup
  • 1 tbsp instant espresso powder
  • 1 tsp cinnamon
  • ½ tsp vanilla extract
  • ¼ tsp sea salt

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a small saucepan, warm maple syrup, espresso powder, cinnamon, vanilla, and salt.
  • Stir until smooth.
  • Toss cashews in the mixture until evenly coated.
  • Spread onto the baking sheet in a single layer.
  • Bake for 12-15 minutes, stirring halfway through.
  • Let cool before serving.
