Crunchy pistachios roasted in a rich coffee glaze for a sweet, slightly salty, and highly addictive snack.

- 1 cup pistachios shelled
- ¼ cup brewed espresso
- 2 tbsp honey or maple syrup
- 1 tbsp coconut sugar or brown sugar
- ½ tsp sea salt
- ½ tsp cinnamon optional for extra warmth
Preheat oven to 325°F (165°C).
In a saucepan, heat espresso, honey, sugar, salt, and cinnamon until it thickens slightly.
Toss pistachios in the glaze until fully coated.
Spread them on a lined baking sheet in a single layer.
Roast for 12-15 minutes, stirring once halfway through.
Let cool before devouring or storing in an airtight container.
