Ingredients
  

  • 1 ½ cups walnuts
  • 1 cup dates pitted
  • ½ cup rolled oats
  • ¼ cup brewed espresso
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil
  • ½ tsp cinnamon
  • ¼ tsp sea salt

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking dish.
  • Blend walnuts, oats, and dates in a food processor until crumbly.
  • Heat espresso, maple syrup, and coconut oil in a saucepan until combined.
  • Mix wet and dry ingredients in a bowl, stirring until sticky.
  • Press mixture into the baking dish, smoothing the top.
  • Bake for 15 minutes, then let cool before slicing.
