- 1 ½ cups walnuts
- 1 cup dates pitted
- ½ cup rolled oats
- ¼ cup brewed espresso
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- ½ tsp cinnamon
- ¼ tsp sea salt
Preheat oven to 350°F (175°C) and line a baking dish.
Blend walnuts, oats, and dates in a food processor until crumbly.
Heat espresso, maple syrup, and coconut oil in a saucepan until combined.
Mix wet and dry ingredients in a bowl, stirring until sticky.
Press mixture into the baking dish, smoothing the top.
Bake for 15 minutes, then let cool before slicing.
