Ingredients
  

Coffee Granita Base

  • Strong brewed coffee — 3 cups (720 ml), freshly prepared
  • Brown sugar — 1/3 cup (67 g), adjust to taste
  • Water — 1/4 cup (60 ml)
  • Vanilla extract — 1 teaspoon (5 ml)
  • Ground cinnamon — 1/4 teaspoon (0.75 g), optional

  • Whipped cream — 1/2 cup (60 g), optional
  • Dark chocolate shavings — 2 tablespoons (10 g), optional
  • Cocoa powder — 1 pinch (0.1 g), optional

Instructions
 

  • Brew 3 cups of strong coffee and let it cool slightly. Use concentrated coffee for a bold flavor that remains noticeable after freezing.
  • Combine brown sugar and water in a small saucepan. Warm over low heat until the sugar dissolves completely, then remove from the heat.
  • Stir the warm syrup into the coffee. Add vanilla and cinnamon if using, then whisk until everything blends evenly.
  • Pour the coffee mixture into a shallow freezer-safe tray. Keep the layer shallow so the liquid freezes evenly and scrapes easily.
  • Freeze uncovered for about 45 minutes, until ice crystals begin forming around the edges. Scrape the frozen portions toward the center with a fork.
  • Return the tray to the freezer and scrape again every 30 to 45 minutes. Continue until the entire mixture becomes loose, fluffy crystals.
  • Break apart larger frozen pieces with the fork. The finished granita should look light and crystalline rather than smooth like sorbet.
  • Freeze for another 30 minutes if the texture feels too soft. Scrape once more before serving to restore the fluffy crystals.
  • Spoon the granita into chilled serving glasses. Top with whipped cream, chocolate shavings, or cocoa if desired.
  • Serve immediately while the crystals remain loose and icy. If the granita becomes solid in storage, let it stand briefly and scrape vigorously before serving.

Notes

Use a shallow tray and scrape regularly for delicate, fluffy crystals. Frequent scraping creates a lighter texture, while less frequent scraping produces larger, harder ice crystals. For a softer granita, increase the sugar slightly; for a firmer, icier texture, use less sugar. Customize with cinnamon, cardamom, orange zest, cocoa, chocolate syrup, caramel, or a splash of vanilla. Keep the finished granita covered in the freezer for up to 1 week. Let it stand for 5 to 10 minutes before scraping if it becomes very firm. Do not freeze it in a deep container because the mixture will freeze unevenly and become difficult to scrape.
