Ingredients
  

  • 1 ½ cups all-purpose flour because structure matters

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, baking soda, and salt. Set aside.
  • In a separate bowl, beat butter, brown sugar, and granulated sugar until creamy.
  • Add the egg, vanilla extract, and instant coffee. Mix until smooth.
  • Slowly add the dry ingredients to the wet mixture. Stir just until combined.
  • Fold in the chocolate chips without overmixing.
  • Scoop out dough, form small balls, and place them on the baking sheet.
  • Bake for 10–12 minutes, until golden brown with slightly soft centers.
  • Let cool for at least 5 minutes before devouring.
  • Enjoy with coffee, milk, or straight from the tray.
