Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together flour, baking soda, and salt. Set aside.
In a separate bowl, beat butter, brown sugar, and granulated sugar until creamy.
Add the egg, vanilla extract, and instant coffee. Mix until smooth.
Slowly add the dry ingredients to the wet mixture. Stir just until combined.
Fold in the chocolate chips without overmixing.
Scoop out dough, form small balls, and place them on the baking sheet.
Bake for 10–12 minutes, until golden brown with slightly soft centers.
Let cool for at least 5 minutes before devouring.
Enjoy with coffee, milk, or straight from the tray.
