- ½ cup breadcrumbs
- ¼ cup rolled oats
- 1 tbsp ground flaxseed + 3 tbsp water
- 2 cloves garlic minced
- 1 tsp onion powder
- ½ tsp smoked paprika
- 1 tsp espresso powder
- 2 tbsp soy sauce
- Salt and pepper to taste
Mocha Brownies:
- ½ cup all-purpose flour
- ½ cup almond flour
- ½ cup cocoa powder
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup coconut sugar
- ½ cup plant-based milk
- ⅓ cup melted coconut oil
- 1 tbsp instant coffee
- 1 tsp vanilla extract
- ½ cup vegan chocolate chips
Coffee-Infused Vegan Meatballs:
Mix flaxseed with water, let sit 5 minutes. It’s the vegan egg thing—just trust it.
In a food processor, combine lentils, oats, garlic, spices, soy sauce, espresso, and flax mixture. Pulse until chunky, not mushy.
Stir in breadcrumbs. Form into 12 small meatballs with your hands like the goddess you are.
Heat oil in skillet, cook meatballs 7–9 minutes, turning until golden and firm.
Mocha Brownies:

Mix wet ingredients: sugar, milk, oil, vanilla, and coffee. Combine with dry ingredients until smooth.
