Ingredients
  

Crust

  • 1 ½ cups crushed graham crackers
  • ½ cup melted butter
  • ¼ cup sugar

Cheesecake Filling

  • 16 oz cream cheese softened
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream

Coffee Mousse Topping

  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 tbsp instant espresso powder
  • 1 tsp gelatin powder
  • 2 tbsp warm water

Instructions
 

Prepare the Crust

  • Combine crushed crackers, melted butter, and sugar in a bowl.
  • Press mixture into a springform pan and bake at 350°F (175°C) for 10 minutes.
  • Let it cool while preparing the filling.

Make the Cheesecake

  • Beat cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing after each.
  • Stir in vanilla and sour cream.
  • Pour filling over crust and bake for 50 minutes.
  • Let cool before adding mousse.

Prepare the Coffee Mousse

  • Dissolve espresso powder in warm water and sprinkle gelatin on top.
  • Whisk heavy cream and powdered sugar until soft peaks form.
  • Fold in the espresso mixture and chill for 20 minutes.

Assemble and Serve

  • Spread the mousse over the cooled cheesecake.
  • Refrigerate for at least 2 hours before slicing.
