Crust
- 1 ½ cups crushed graham crackers
- ½ cup melted butter
- ¼ cup sugar
Cheesecake Filling
- 16 oz cream cheese softened
- ¾ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- ½ cup sour cream
Coffee Mousse Topping
- 1 cup heavy cream
- ¼ cup powdered sugar
- 1 tbsp instant espresso powder
- 1 tsp gelatin powder
- 2 tbsp warm water
Prepare the Crust
Combine crushed crackers, melted butter, and sugar in a bowl.
Press mixture into a springform pan and bake at 350°F (175°C) for 10 minutes.
Let it cool while preparing the filling.
Make the Cheesecake
Beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing after each.
Stir in vanilla and sour cream.
Pour filling over crust and bake for 50 minutes.
Let cool before adding mousse.
Prepare the Coffee Mousse
Dissolve espresso powder in warm water and sprinkle gelatin on top.
Whisk heavy cream and powdered sugar until soft peaks form.
Fold in the espresso mixture and chill for 20 minutes.
