For the Choux Pastry
- ½ cup water
- ½ cup whole milk
- ½ cup unsalted butter
- 1 tbsp sugar
- 1 cup all-purpose flour
- 4 large eggs
For the Coffee Mousse Filling
- ½ cup heavy cream
- ¼ cup powdered sugar
- 1 tbsp instant espresso dissolved in 1 tbsp hot water
- ½ tsp vanilla extract
- 1 tsp gelatin bloomed in 1 tbsp cold water
Make the Choux Pastry
Preheat oven to 375°F (190°C).
Heat water, milk, butter, and sugar in a saucepan until butter melts.
Add flour and stir until it forms a dough ball.
Remove from heat and let it cool for 5 minutes.
Beat in eggs, one at a time, until smooth.
Pipe small rounds onto a lined baking sheet.
Bake for 25-30 minutes until golden.
Let them cool completely before filling.
Prepare the Coffee Mousse
Whip heavy cream and powdered sugar until soft peaks form.
Stir in dissolved espresso and vanilla extract.
Melt bloomed gelatin and gently fold it into the mixture.
Chill for 30 minutes.
Assemble the Pastry
Slice choux pastries in half.
Pipe coffee mousse into each pastry.
Dust with powdered sugar or drizzle with chocolate.
Serve immediately or refrigerate for later.
