Ingredients
For the Pastry (Choux Dough)

For the Coffee Mousse Filling

heavy cream

powdered sugar

instant espresso powder

For the Chocolate Glaze

dark chocolate
melted

Instructions
Make the Choux Pastry
Preheat oven to 375°F (190°C).
In a saucepan, melt butter in water over medium heat.
Stir in flour, sugar, and salt until a smooth dough forms.
Remove from heat and cool for 5 minutes.
Add eggs one at a time, mixing well.
Pipe dough onto a baking sheet in 4-inch strips.
Bake for 25 minutes until golden and crisp.
Cool completely before filling.
Prepare the Coffee Mousse
Whip heavy cream, sugar, and espresso powder to stiff peaks.
Stir in vanilla extract and chill for 15 minutes.
Assemble the Éclairs
Slice éclairs in half or poke a hole for piping.
Fill with coffee mousse using a piping bag.
Make the Chocolate Glaze
Melt chocolate, butter, and cream until smooth.
Dip tops of éclairs into glaze or drizzle over.
Let set for 10 minutes before serving.
