Ingredients
  

For the Pastry (Choux Dough)

  • ½ cup butter
  • 1 cup water
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 tbsp sugar
  • ½ tsp salt

For the Coffee Mousse Filling

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tbsp instant espresso powder
  • 1 tsp vanilla extract

For the Chocolate Glaze

  • ½ cup dark chocolate melted
  • 2 tbsp heavy cream
  • 1 tbsp butter

Instructions
 

Make the Choux Pastry

  • Preheat oven to 375°F (190°C).
  • In a saucepan, melt butter in water over medium heat.
  • Stir in flour, sugar, and salt until a smooth dough forms.
  • Remove from heat and cool for 5 minutes.
  • Add eggs one at a time, mixing well.
  • Pipe dough onto a baking sheet in 4-inch strips.
  • Bake for 25 minutes until golden and crisp.
  • Cool completely before filling.

Prepare the Coffee Mousse

  • Whip heavy cream, sugar, and espresso powder to stiff peaks.
  • Stir in vanilla extract and chill for 15 minutes.

Assemble the Éclairs

  • Slice éclairs in half or poke a hole for piping.
  • Fill with coffee mousse using a piping bag.

Make the Chocolate Glaze

  • Melt chocolate, butter, and cream until smooth.
  • Dip tops of éclairs into glaze or drizzle over.
  • Let set for 10 minutes before serving.
