Ingredients
  

For the Cookies

  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract

For the Coffee Mousse Ice Cream

  • 1 cup heavy cream
  • ½ cup condensed milk
  • 2 tbsp instant espresso powder
  • 1 tsp vanilla extract

Instructions
 

Make the Cookies

  • Preheat oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • Whisk flour, cocoa powder, baking soda, and salt in a bowl.
  • Cream butter and brown sugar until light and fluffy.
  • Add egg and vanilla, mixing until smooth.
  • Fold in the dry ingredients and mix until combined.
  • Scoop dough onto the baking sheet, forming even rounds.
  • Bake for 10-12 minutes until firm.
  • Cool completely before assembling.

Prepare the Coffee Mousse Ice Cream

  • Whip heavy cream, condensed milk, and espresso powder until thick.
  • Stir in vanilla extract and freeze for at least 2 hours.

Assemble the Sandwiches

  • Scoop mousse ice cream onto a cookie and press another on top.
  • Freeze sandwiches for 30 minutes before serving.
