Instructions
Make the Cookies
Preheat oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Whisk flour, cocoa powder, baking soda, and salt in a bowl.
Cream butter and brown sugar until light and fluffy.
Add egg and vanilla, mixing until smooth.
Fold in the dry ingredients and mix until combined.
Scoop dough onto the baking sheet, forming even rounds.
Bake for 10-12 minutes until firm.
Cool completely before assembling.
Prepare the Coffee Mousse Ice Cream
Whip heavy cream, condensed milk, and espresso powder until thick.
Stir in vanilla extract and freeze for at least 2 hours.
Assemble the Sandwiches
Scoop mousse ice cream onto a cookie and press another on top.
Freeze sandwiches for 30 minutes before serving.
