For the Meringue Kisses
- 2 large egg whites
- ½ cup granulated sugar
- ½ tsp instant espresso powder
- ¼ tsp cream of tartar
- ½ tsp vanilla extract
For the Coffee Mousse Filling
- ¾ cup heavy cream
- ¼ cup powdered sugar
- 1 tbsp instant coffee granules
- ½ tsp vanilla extract
- Instructions
Make the Meringue Kisses
Preheat oven to 225°F (110°C). Line a baking sheet with parchment paper.
Whip egg whites and cream of tartar until foamy.
Gradually add sugar, beating until glossy peaks form.
Mix in espresso powder and vanilla.
Pipe small meringue kisses onto the sheet.
Bake for 90 minutes. Turn off the oven and let them cool inside.
Prepare the Coffee Mousse
Whip heavy cream, powdered sugar, coffee, and vanilla until fluffy.
Transfer mousse to a piping bag.
Assemble the Kisses
Pipe coffee mousse onto half the meringues.
Sandwich with the remaining kisses.
Chill for 15 minutes before serving.
