Press the mixture into the pan and bake for 10–12 minutes until golden brown.
In another bowl, whisk brewed coffee, maple syrup, coconut sugar, cornstarch, vanilla, and salt for the filling.
Fold in chopped pecans and pour the mixture over the baked crust.
Bake for another 20–25 minutes until the filling is set.
Let the bars cool completely before slicing and serving.
