Ingredients
  

  • 6 large eggs
  • 1/2 cup brewed coffee cooled
  • 1/2 cup protein powder flavor of choice
  • 1/2 cup milk dairy or non-dairy
  • 1/2 cup diced vegetables bell peppers, spinach, or your choice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: cheese herbs, or spices

Instructions
 

  • Preheat the Oven
  • Set your oven to 350°F (175°C) and grease your muffin tin to prevent sticking.
  • Mix Ingredients
  • In a mixing bowl, whisk together the eggs, cooled coffee, protein powder, and milk until smooth.
  • Add Vegetables
  • Stir in the diced vegetables, salt, and black pepper. Ensure everything is well mixed.
  • Pour into Muffin Tin
  • Fill each muffin cup about 2/3 full with the mixture. If desired, sprinkle cheese or herbs on top.
  • Bake
  • Place the muffin tin in the preheated oven and bake for 20 minutes or until the muffins are set.
  • Cool and Serve
  • Remove from the oven and allow the muffins to cool slightly before popping them out of the tin.
