In a mixing bowl, combine almond butter, rolled oats, protein powder, cocoa powder, maple syrup or honey, cooled coffee, vanilla extract, and salt.
Stir until the mixture is well combined and reaches a thick, fudgy consistency.
Transfer the mixture to the prepared baking pan, spreading it evenly across the bottom.
Bake for 20-30 minutes, or until the edges look firm and the center is set.
Remove from the oven and let it cool in the pan for 10 minutes.
Lift the fudge out of the pan using the parchment overhang, and cool completely on a wire rack.
