These Coffee Spice Energy Bars combine coffee with warming spices for a satisfying, energizing snack.

- 1 cup oats
- 1/4 cup ground coffee
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp vanilla extract
- 1/4 tsp salt
- 2 tbsp chia seeds
- 1-2 tbsp water as needed
In a food processor, blend oats, coffee, and spices until finely chopped.
Add almond butter, maple syrup, and vanilla extract. Blend until smooth.
Add chia seeds and mix again.
Slowly add water, a tablespoon at a time, until the mixture is sticky but not runny.
Press mixture into a parchment-lined 8x8 pan.
Refrigerate for 15-20 minutes to firm up.
Slice into bars and enjoy!
