These Coffee Spice Energy Bars combine coffee with warming spices for a satisfying, energizing snack.

Ingredients
  

  • 1 cup oats
  • 1/4 cup ground coffee
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp chia seeds
  • 1-2 tbsp water as needed

Instructions
 

  • In a food processor, blend oats, coffee, and spices until finely chopped.
  • Add almond butter, maple syrup, and vanilla extract. Blend until smooth.
  • Add chia seeds and mix again.
  • Slowly add water, a tablespoon at a time, until the mixture is sticky but not runny.
  • Press mixture into a parchment-lined 8x8 pan.
  • Refrigerate for 15-20 minutes to firm up.
  • Slice into bars and enjoy!
