- For the Coffee-Spiced Meatloaf:
- 1 cup cooked lentils
- 1 cup chopped mushrooms
- ½ cup finely chopped walnuts
- 1 small onion diced
- 2 garlic cloves minced
- 1 tbsp ground flax + 3 tbsp water
- ½ cup breadcrumbs
- 1 tbsp tomato paste
- 1 tbsp soy sauce
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp chili powder
- 1 tsp instant coffee granules
- Salt and black pepper to taste
- For the Mocha Truffles:
- 1 cup dark vegan chocolate chips
- ¼ cup full-fat coconut milk
- 1 tbsp espresso powder
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- Cocoa powder for dusting
Make the Meatloaf:
Preheat oven to 375°F (190°C). Line loaf pan with parchment paper.
Mix flaxseed and water, set aside to gel.
Sauté onion and garlic until fragrant. Add mushrooms, cook until moisture evaporates.
In a processor, combine lentils, mushrooms, walnuts, soy sauce, tomato paste, spices, and coffee granules. Pulse until chunky but combined.
Stir in breadcrumbs and flax mixture by hand.
Press mixture into loaf pan. Smooth top.
Bake 45 minutes. Let cool 10 minutes before slicing with dignity.
Make the Mocha Truffles:
In a saucepan, heat coconut milk until steaming.
Add espresso powder, stir to dissolve.
Pour over chocolate chips in a bowl. Let sit 2 minutes.
Stir until smooth, add maple syrup and vanilla.
Chill 1 hour.
Scoop and roll into balls. Dust with cocoa powder. Try not to eat them all immediately.
