  • 1 cup all-purpose flour
  • ½ tsp cinnamon
  • ¼ cup unsalted butter cold, cut into cubes

Instructions
 

Make the Cake:

  • Preheat the oven to 350°F. Grease and flour a 9-inch round cake pan.
  • In a mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  • Beat in eggs, sour cream, vanilla, and softened butter. Slowly add the cooled coffee and mix until smooth.
  • Pour the batter into the prepared pan.

Make the Streusel Topping:

  • In a separate bowl, combine brown sugar, flour, and cinnamon.
  • Cut in the cold butter until the mixture is crumbly.
  • Sprinkle the streusel over the cake batter.

Bake:

  • Bake for 45-50 minutes, or until a toothpick comes out clean. Let cool before serving.
