These Coffee Walnut Energy Bars blend the power of coffee and the crunch of walnuts into a perfect snack.

Ingredients
  

  • 1 cup rolled oats
  • ½ cup coffee grounds
  • ¼ cup walnut halves
  • ¼ cup almond butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds
  • Pinch of salt
  • ¼ cup water if needed

Instructions
 

  • In a food processor, pulse oats and coffee grounds until coarsely ground.
  • Add almond butter, maple syrup, vanilla, chia seeds, and salt, then blend until combined.
  • Stir in chopped walnuts.
  • Press the mixture into an 8x8 pan lined with parchment paper.
  • Chill in the fridge for 20 minutes.
  • Cut into 12 bars.
  • Enjoy your energizing snack!
