These Coffee Walnut Energy Bars blend the power of coffee and the crunch of walnuts into a perfect snack.

- 1 cup rolled oats
- ½ cup coffee grounds
- ¼ cup walnut halves
- ¼ cup almond butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp chia seeds
- Pinch of salt
- ¼ cup water if needed
In a food processor, pulse oats and coffee grounds until coarsely ground.
Add almond butter, maple syrup, vanilla, chia seeds, and salt, then blend until combined.
Stir in chopped walnuts.
Press the mixture into an 8x8 pan lined with parchment paper.
Chill in the fridge for 20 minutes.
Cut into 12 bars.
