I personally indulge in these frozen wonders after I’ve aced a tricky shift or when I need to flaunt my superior coffee skills at the next BBQ. They’re perfect for cooling off on those days when Portland weather is either scorching or sporadically drizzly. Plus, if you want to impress someone with your coolness factor, serve these popsicles and watch as they marvel at your genius.

Ingredients
  

  • 2 cups cold brew coffee the star of the show, naturally
  • 1/2 cup sweetened condensed milk because your sweet tooth deserves some pampering
  • 1/4 cup milk any kind you like; we’re not judging
  • 1 tsp vanilla extract to add a hint of sophistication

Instructions
 

  • Mix Ingredients: In a mixing bowl, combine the cold brew coffee, sweetened condensed milk, milk, and vanilla extract. Whisk until everything blends into a creamy coffee dream.
  • Pour into Molds: Carefully pour the mixture into your popsicle molds. Try not to make a mess—unless you’re into that sort of thing.
  • Insert Sticks: Place the popsicle sticks into the molds. Give them a little wiggle to ensure they’re steady. No one wants a popsicle stick that goes rogue.
  • Freeze: Stick the molds in the freezer and let them freeze for about 6 hours or until solid. Patience is key here, but trust me, it's worth it.
  • Unmold and Enjoy: Once frozen, run warm water over the outside of the molds for a few seconds to help release the popsicles. Enjoy the frozen caffeinated bliss!
