Combine coarsely ground coffee and cold water. Let it steep in the fridge for 12–24 hours.
Preheat oven to 350°F (175°C).
Mix flour, baking soda, and salt in a bowl.
Cream butter, sugar, and egg in a separate bowl.
Gradually add dry ingredients to the wet mixture.
Stir in caramel bits and sea salt.
Drop spoonfuls of dough onto a baking sheet.
Bake for 10–12 minutes.
Once cookies are done, cool on a wire rack.
Serve cold brew with ice cubes and optional milk.
