For the Cucumber and Chia Salad:
- 2 cucumbers thinly sliced
- 1/4 cup chia seeds
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- 1/4 cup red onion thinly sliced
- Fresh parsley chopped (for garnish)
For the Coffee Flan:
- 1 cup brewed coffee cooled
- 1 1/2 cups heavy cream
- 1/2 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- Pinch of salt
Cucumber and Chia Salad:
In a bowl, mix cucumber slices, chia seeds, olive oil, lemon juice, and salt/pepper.
Toss in thinly sliced red onion.
Garnish with parsley and serve immediately.
Coffee Flan:
Preheat oven to 325°F (160°C).
In a bowl, whisk together eggs, sugar, and salt until smooth.
Gradually stir in coffee and heavy cream, then add vanilla.
Pour mixture into a flan pan.
Place the flan pan in a larger baking dish, add hot water halfway up the sides.
Bake for 30 minutes or until set.
Let cool, then refrigerate for at least 2 hours before serving.
