Cucumber Salad:
- 2 large cucumbers thinly sliced
- 1 tbsp rice vinegar
- ½ tsp salt
- 1 tsp maple syrup
- 1 tsp sesame oil
- 1 tbsp chopped dill or mint
Coffee Mousse:
- 1 cup silken tofu
- ½ cup strong brewed coffee cooled
- ¼ cup maple syrup
- 1 tsp vanilla extract
- ½ cup vegan dark chocolate chips melted
- Pinch of salt
Cucumber Salad:
Slice cucumbers and add to mixing bowl.
In another bowl, whisk vinegar, maple syrup, oil, and salt.
Toss cucumbers with dressing.
Add chopped herbs and chill before serving.
Coffee Mousse:
Melt chocolate chips and let them cool slightly.
Blend silken tofu, coffee, syrup, vanilla, and salt until creamy.
Add melted chocolate and blend until smooth.
Scoop into cups and refrigerate for 1 hour.
Serve chilled, preferably with a smirk.
