Cucumber Salad:
- 2 cucumbers thinly sliced
- 1 tbsp rice vinegar
- ½ tsp sea salt
- 1 tsp sesame oil
- 1 tsp maple syrup
- 1 tbsp chopped mint or dill
Espresso Brownies:
- 1 cup almond flour
- ½ cup unsweetened cocoa powder
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup brewed espresso strong!
- ½ cup maple syrup
- ¼ cup coconut oil melted
- 1 tsp vanilla extract
- ¼ cup vegan dark chocolate chips
Cucumber Salad:
Slice cucumbers and place in bowl.
Mix vinegar, syrup, sesame oil, salt, and herbs.
Toss with cucumbers. Chill for 5 minutes.
Serve immediately or refrigerate.

Preheat oven to 350°F (175°C).
