Base Layer
- 1 ½ cups crushed cookies digestives, Oreos, or graham crackers
- 5 tbsp melted butter or coconut oil
Ice Cream Layers
- 4 cups flavor 1 ice cream softened slightly
- 4 cups flavor 2 ice cream softened slightly
- 4 cups flavor 3 ice cream optional, softened slightly
Toppings
- 1 cup whipped cream vegan or regular
- ½ cup chopped nuts sprinkles, or chocolate chips
- Caramel or fudge drizzle optional
Step 1: Prepare the Crust
Combine crushed cookies and melted butter in a bowl, mixing well.
Press the mixture into the bottom of a parchment-lined springform pan. Freeze for 15 minutes.
Step 2: Layer the Ice Cream
Spread the first ice cream flavor over the crust evenly. Freeze for 20 minutes.
Add the second ice cream flavor, smoothing it with an offset spatula. Freeze for 20 minutes.
Repeat with the third flavor, if using. Freeze for 4 hours or until solid.
Step 3: Add the Toppings
Spread whipped cream over the top of the cake for a smooth finish.
Sprinkle your chosen toppings evenly across the surface.
Drizzle caramel or fudge for extra flavor (optional).
