Ingredients
  

Base Layer

  • 1 ½ cups crushed cookies digestives, Oreos, or graham crackers
  • 5 tbsp melted butter or coconut oil

Ice Cream Layers

  • 4 cups flavor 1 ice cream softened slightly
  • 4 cups flavor 2 ice cream softened slightly
  • 4 cups flavor 3 ice cream optional, softened slightly

Toppings

  • 1 cup whipped cream vegan or regular
  • ½ cup chopped nuts sprinkles, or chocolate chips
  • Caramel or fudge drizzle optional

Instructions
 

Step 1: Prepare the Crust

  • Combine crushed cookies and melted butter in a bowl, mixing well.
  • Press the mixture into the bottom of a parchment-lined springform pan. Freeze for 15 minutes.

Step 2: Layer the Ice Cream

  • Spread the first ice cream flavor over the crust evenly. Freeze for 20 minutes.
  • Add the second ice cream flavor, smoothing it with an offset spatula. Freeze for 20 minutes.
  • Repeat with the third flavor, if using. Freeze for 4 hours or until solid.

Step 3: Add the Toppings

  • Spread whipped cream over the top of the cake for a smooth finish.
  • Sprinkle your chosen toppings evenly across the surface.
  • Drizzle caramel or fudge for extra flavor (optional).

Step 4: Freeze and Serve

  • Freeze the completed cake for 1–2 hours to set.
  • Slice with a warm knife for perfect portions.
