Ingredients
  

  • 1 box of vanilla cake mix
  • 3 pints of different flavored ice cream Rainbow sherbet, chocolate, vanilla, whatever tickles your fancy
  • 1 cup whipped cream
  • 1/2 cup rainbow sprinkles Go big or go home
  • 1/2 cup chocolate chips Optional, because why not?
  • Food coloring Red, yellow, blue, green
  • 1/4 cup frosting for the outer layer

Instructions
 

  • Bake the cake as per box instructions and let it cool.
  • Scoop the ice cream into bowls, divide by flavor, and color each one using food coloring.
  • Slice the cooled cake into two or more layers.
  • Spread a layer of ice cream onto the cake, followed by a layer of whipped cream.
  • Freeze for an hour.
  • Repeat layers as desired (because we all love excess).
  • Frost the top with whipped cream and decorate with sprinkles and chips.
  • Freeze again for at least 2 hours before serving.
