Ingredients
  

Protein Latte Cookie Dough

  • 1 cup rolled oats old-fashioned oats
  • 1 scoop vanilla protein powder about 30 grams
  • 2 tsp instant espresso powder for latte flavor
  • 1 tsp baking powder
  • 0.5 tsp ground cinnamon optional
  • 1 large egg room temperature
  • 0.25 cup milk dairy or nondairy
  • 0.25 cup maple syrup
  • 1 tsp vanilla extract
  • 0.25 cup white chocolate chips optional

Ice Cream Cookie Filling

  • 0.5 cup light vanilla frozen yogurt optional filling

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix oats, protein powder, espresso powder, baking powder, and cinnamon until evenly distributed.
  • Whisk egg, milk, maple syrup, and vanilla extract until smooth and creamy.
  • Combine wet and dry ingredients. Stir until a thick, soft dough forms. Fold in white chocolate chips.
  • Scoop dough onto the prepared tray and lightly flatten each portion for even baking.
  • Bake for 10 to 12 minutes until edges are lightly golden while centers stay tender.
  • Cool completely. For an Ice Cream Cookie or Bristle Cookie variation, sandwich frozen yogurt between two cookies and freeze until firm.

Notes

For softer cookies, bake for the shorter time range. For crispier cookies, extend baking by a few minutes. Freeze cookies individually on a tray before storing. Assemble sandwich cookies quickly to maintain a firm filling. Customize flavors with caramel extract, pumpkin spice, or cocoa powder. Store in an airtight container for up to 4 days or freeze for up to 2 months.
