Tart Shells
- 1 ¼ cups all-purpose flour
- ½ cup unsalted butter chilled and cubed
- ¼ cup powdered sugar
- 1 egg yolk
- 2 tbsp cold water
- ¼ tsp salt
Espresso Mousse
- 1 cup heavy cream
- ¼ cup powdered sugar
- 2 tbsp cocoa powder
- 1 tbsp instant espresso powder
- 1 tsp vanilla extract
- ½ tsp gelatin powder
- 2 tbsp warm water
Chocolate Drizzle (Optional)
- ½ cup dark chocolate melted
Prepare the Tart Shells
Combine flour, sugar, and salt in a bowl.
Cut in butter until mixture resembles coarse crumbs.
Add egg yolk and cold water, mixing until dough forms.
Roll out dough and press into tart molds.
Chill for 20 minutes, then bake at 350°F (175°C) for 12-15 minutes.
Let cool completely before filling.
Make the Espresso Mousse
Dissolve espresso powder in warm water. Sprinkle gelatin on top and let sit for 5 minutes.
Whisk heavy cream, sugar, cocoa powder, and vanilla until soft peaks form.
Fold in the espresso mixture gently. Chill for 30 minutes.
Assemble the Tarts
Spoon the mousse into tart shells.
Chill for at least 1 hour before serving.
Drizzle melted chocolate on top if desired.
