- ¼ cup brewed espresso strong and bold
- 2 tbsp maple syrup
- 1 tbsp brown sugar
- ½ tsp cinnamon
- ¼ tsp salt
- 1 tbsp coconut oil or butter
- ½ tsp vanilla extract
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix pumpkin seeds in a bowl and set aside.
Heat espresso, maple syrup, sugar, cinnamon, salt, coconut oil, and vanilla in a saucepan over low heat. Stir until combined.
