Ingredients
  

  • 1 cup raw cashews
  • ½ cup rolled oats
  • 3 tbsp brewed espresso cooled
  • ¼ cup honey or maple syrup
  • ½ tsp vanilla extract
  • 1 tbsp cacao powder
  • ¼ tsp cinnamon
  • ¼ tsp sea salt

Instructions
 

  • Blend cashews and oats in a food processor until finely ground.
  • Add espresso, honey, vanilla, cacao, cinnamon, and salt. Process until the mixture sticks together.
  • Scoop out small portions and roll into bite-sized balls.
  • Place bites on a plate and refrigerate for at least 15 minutes.
  • Enjoy immediately or store in an airtight container for snacking emergencies.
