Ingredients
  

Caramel Syrup

  • 1 cup granulated sugar
  • 1 4 cup water divided
  • 3 4 cup hot water
  • 1 tsp vanilla extract
  • 1 pinch salt optional

Instructions
 

  • Heat the sugar with one-quarter cup water over medium heat without stirring until it turns a deep golden amber.
  • Carefully whisk in the hot water a little at a time. The mixture will bubble vigorously before becoming smooth.
  • Add the vanilla extract and salt. Stir until fully combined and the syrup looks glossy.
  • Simmer gently for 1 to 2 minutes until slightly thickened. It should coat the back of a spoon lightly.
  • Cool for several minutes, then pour into a clean glass bottle using a funnel. Refrigerate completely.
  • Stir 1 to 2 tablespoons into coffee, espresso, lattes, milk, or desserts for rich caramel flavor.

Notes

Cook the caramel lightly for a softer flavor or slightly darker for deeper richness without burning. Chill before preparing iced beverages. Handle carefully while adding hot water because caramel is extremely hot. Customize with cinnamon or vanilla bean. Store refrigerated in a sealed container for up to one month and shake before using.
